1996 Penfolds Bin 707 Cabernet Sauvignon. Penfolds Bin 707 is the Grange of Cabernet Sauvignon. It is made the same way as Penfolds Grange, the best cabernet fruit, multi regional, multi vineyard, new American oak, consistency, but it is a cabernet sauvignon and not a shiraz. Penfolds Bin 707 is one of the best Cabernet Sauvignon’s made in Australia. The 2010 release saw a massive price hike for Penfolds Bin 707, from a RRP of $220 it rocketed up to $350 a bottle then in 2017 these wines increased again to be fetching over $500 a bottle so it is fair to say it now performs in an awesome manner on the secondary wine market.

The fruit used for the 1996 Penfolds Bin 707 was sourced from the Barossa Valley and Coonawarra Wine Regions. The cabernet from Coonawarra adds strength and firmness to the structure of the wine whilst the cabernet sourced from the Barossa Valley adds sweet fruit richness. The 1996 vintage was excellent, in particular for cabernet in the Coonawarra Wine Region which experienced a cool and long season allowing fruit to ripen slowly.

During the Rewards of Patience, the 1996 Penfolds Bin 707 was described as deep crimson in colour. A lovely fresh classical wine with pure cassis/cedar/herb garden aromas. The 1996 Penfolds Bin 707 is a powerful and complex wine with intense sweet cassis/dark fruit, vanilla/malt oak and fine-grained cedar like tannins. The wine finishes firm, long but sweet. A superb Penfolds Bin 707.
