2019 Sassafras Chardonnay Savagnin Ancestral. A gorgeous Pet-Nat made with Savagnin grapes from Canberra and Chardonnay from Tumbarumba. The Savagnin drives the aromatics and flavour of the wine with characters of white peach, lemon pith, tonic water and crisp apple. This is a cracking wine to drink over summer with friends and family.
Made by the Ancestral method, using the original grape sugars and yeast, it was carbonated in this bottle. Like a bottle-conditioned ale or cider, there will be a small amount of yeast at the bottom, so chill upright.
